Artisanal Production Without Shortcuts

The process begins with fully mature, estate-grown 100% Blue Weber agaves harvested from the volcanic soils of the Tequila Valley. The piñas are slow-roasted in traditional brick ovens for over 30 hours, then crushed using a heavy volcanic stone tahona wheel to gently extract the sweet juices without shredding the fibers. Following natural open-air fermentation using wild mountain yeast, the liquid undergoes slow double-distillation in small copper-pot stills, resulting in an unaged blanco of staggering complexity and purity.
