A Match Made in Vermont
When it comes to traditional Vermont craft, two things reign supreme: bold rye whiskey and pure maple syrup. WhistlePig brings these two worlds together in their acclaimed Rye Whiskey Barrel-Aged Maple Syrup. Produced in collaboration with Runamok Maple, this single-ingredient product elevates everyday maple syrup into a complex, multi-layered gourmet experience.
The Barrel-Aged Difference
The process begins with pure, Grade A organic maple syrup harvested from Vermont’s pristine maple forests. This syrup is then filled into charred American oak barrels that previously held WhistlePig’s award-winning aged rye whiskey. For up to 12 months, the syrup rests in the barrels, absorbing the charred oak sugars, vanilla compounds, and spice-heavy rye residue trapped deep within the wood fibers. The result is a deeply rich, velvety syrup that carries all the aromatic complexity of top-shelf rye whiskey without the alcohol.
Tasting Notes
-
Aroma: Warm, sweet, and incredibly inviting. Classic caramelized maple sugar is accented by complex notes of toasted oak, vanilla bean, and a faint hint of spicy rye grain.
-
Palate: Thick, buttery, and decadent. The natural sweetness of the maple syrup is beautifully rounded out and tempered by the rich tannins of charred wood, creating a balanced flavor profile featuring butterscotch, toffee, and a mild, warming spice.
-
Finish: Smooth and lingering, with a pleasant oaky dryness that cuts through the sugary sweetness.
Creative Ways to Serve
-
On the Bar: Use it as the sweetener in a classic Old Fashioned or a Whiskey Sour to add an instant, barrel-aged complexity that simple syrup simply cannot replicate.
-
At the Breakfast Table: Take your pancakes, waffles, French toast, or oatmeal to a luxury level with a rich, caramelized drizzle.
-
In the Kitchen: Create high-end culinary glazes for roasted Brussels sprouts, carrots, salmon, or pork chops. It also serves as a beautiful sweetener for roasted pecans or gourmet marinades.
