While WhistlePig’s flagship 12-Year expression utilizes a fixed blend of Old World wine casks (Madeira, Sauternes, and Port), the elite Bespoke Barrel program allows selecting groups to fully customize their flavor profile by pairing a premium aged base rye with an experimental finishing vessel.
For this exclusive single barrel pick, the San Diego Barrel Boys selected a rare, re-toasted red wine cask. By re-toasting the barrel prior to finishing, the distillery reactivated the wood’s deep layers of cellulose and hemicellulose—re-caramelizing the wood sugars below the original char—all while preserving the rich, jammy wine compounds deeply embedded in the staves. This technique layers flavors onto the whiskey that a standard wine finish simply cannot replicate.
Tasting Notes

Nose: Vibrant rye spice and seasoned oak mingle with deep aromas of caramelized brown sugar, dark plum, vanilla, and a faint hint of red fruit skin.

Palate: Bold, structured, and beautifully balanced. The robust spice of the 12-year rye base is rounded out by decadent layers of molasses, dried dark fruits, and a sophisticated touch of dry wine tannin from the red cask.
