The Boss Hog VI: The Samurai Scientist stands as the first American whiskey ever finished in Japanese Umeshu casks. It is named in honor of Dr. Jōkichi Takamine—the legendary “Samurai Scientist” who revolutionized the American distilling industry over a century ago by introducing traditional Japanese Koji fermentation techniques to grain spirits. Developed in partnership with the celebrated Kitaya Brewery on Japan’s southern island of Kyushu, this release represents an unprecedented bridge between Western distilling heritage and Eastern culinary art.
The Process & Finish
Rather than using a standard yeast strain, the rye grain for this release underwent a complex, koji-driven fermentation process. After aging for 16 years in new charred American oak, the straight rye was finished in barrels that previously held Kitaya’s award-winning Umeshu, a traditional Japanese liqueur made from local Ume plums. Uncut, unfiltered, and bottled at a robust single-barrel cask strength, this liquid preserves every nuance of its transatlantic journey.
Tasting Notes

Nose: Intensely sweet and fragrant. Warm cinnamon, toasted marshmallow, vanilla bean, and maple syrup are beautifully accented by bright notes of ripe plum, sour cherry, and a soft floral perfume.

Palate: Rich, spicy, and remarkably complex. The fiery, robust baking spices and black pepper of the aged rye are elegantly tempered by waves of sweet plum, ginger, and brown sugar. A deeper layer reveals a savory, subtle umami backbone that elevates the mouthfeel.

Finish: Extremely long, evolving, and warm. Slow-fading trails of toasted oak spice, dried dark fruits, and a faint, sweet whisper of Japanese wood smoke.
