Launched in mid-2021 to instant global acclaim, the Hibiki Blossom Harmony 2021 represents a historic moment for the House of Suntory. It is the inaugural bottling of the highly collectible Blossom Harmony series, created specifically to celebrate moments of joy, renewal, and togetherness. To capture the fleeting essence of the Japanese spring, Suntory’s blending team experimented for years before creating a blend explicitly designed around the unique maturation traits of rare Japanese cherry wood.

Finished in Rare Sakura Wood Casks

While the soul of Hibiki relies on a foundation of single malts from Yamazaki and Hakushu married with Chita grain whiskies, the Blossom Harmony release introduces a completely unique wood profile. A select portion of well-aged grain and malt whiskies are transferred into rare Sakura (Japanese cherry blossom tree) casks for their final finishing period. Sakura wood is notoriously difficult to work with due to its high porosity, but it imparts a distinctive, intensely aromatic floral character that cannot be replicated by traditional American or European oak.

The packaging of the 2021 Edition is inspired by Shiki-oriori (the beauty of the four seasons). The traditional 24-faceted Hibiki bottle features an elegant label emblazoned with a soft red and silver Hyakki pattern—a traditional celebratory motif displaying a multi-layered arrangement of cherry blossoms. The clean white presentation box makes it a visually arresting centerpiece on any bar or retail display shelf.

Tasting Notes

• Color: Bright, glowing amber.

• Nose: Intensely fragrant, sweet, and perfume-like. It opens with an unmistakable bouquet of fresh cherry blossoms, sweet jasmine, and ripe red apples, backed by a subtle trail of warm vanilla beans.

• Palate: Soft, smooth, and multi-layered on the tongue. Gentle flavors of acacia honey, candied orange peel, and sweet lychee dance alongside a delicate, woody astringency and green tea-like undertones.

• Finish: Long, refreshing, and deeply aromatic. The finish tapers off cleanly with a lingering, bitter-sweet herbal note, warm baking spices, and a final wave of floral sweetness from the Sakura wood.
